Sodium Stearoyl Lactylate is a white or cream-colored powder with a caramel odor and it disperses well in hot water and is soluble in ethanol, hot oils, and fats. It is used in baked goods as a dough conditioner to improve quality of gluten in wheat flour, aiding in increased volume and more uniform crumb structure. It is also used in non dairy creamer to ensure good dispersion and whitening. It can also be used in Food, Beverage, Health and Personal care products. Sodium stearoyl-2-lactylate is often used for emulsification, aging resistance, gluten fortifying, and keeping freshness in application of bread, noodles, instant noodles, milk, margarine, meat products, etc. It is a versatile food additive used to improve the mix tolerance and volume of processed foods.
