Verv®, also known as Calcium stearoyl-2-lactylate, is a food grade emulsifier that complexes with protein and starch, increasing product strength, shelf life and aids whipping when used in such systems. It is a unique class of surface-active agent that interact with both protein and starches. In baked goods, it is effective dough strengtheners and conditioners and it also provides emulsion stability and texture modification in a variety of food products.
