Puron AG, also known as Omnosal puron AG is a food grade sodium acid pyrophosphate 40 (SAPP), a premix flour with crisping and ingredient improving qualities and is commonly used with baking soda and can be used in preparations of baking powders and in self-raising flour, for example, and has the fastest rate of reaction with sodium bicarbonate in batters and doughs prior to baking.
